Executive Pastry Chef - MOLON Kitchens 

Fine dining can perfect a five-star stay. We’re looking for an Executive Pastry Chef to create our Mandarin Oriental dishes with finesse.

The Executive Pastry Chef is responsible for the overall Pastry Culinary Operations. They are to ensure there is a healthy work environment and positive employee relations throughout the Pastry kitchens. They are responsible for the training and professional development of all kitchen staff. They are to ensure, that agreed quality, hygiene and other standards are kept or surpassed, at all times, by himself and his subordinates. He needs to be cost conscious and quality orientated and has to have the ability to pass this on to his subordinates. The candidate must have chocolate, sugar and bakery skills, these are essentials, also a good creative and adventurous mind for our afternoon tea and desserts.

As an Executive Pastry Chef you will be responsible for the following duties:

  • Is accountable to the Executive Chef, ensure excellent quality throughout the pastry/bakery/dessert offerings in Mandarin Oriental Hyde Park including Rosebery, Banqueting, In-Room Dining, Amenities, Breakfast and the canteen.
  • To supervise and co-ordinate all pastry, bakery, and dessert preparation/presentation
  • To plan production in order to facilitate all daily requirements
  • To develop appropriate seasonal menu offerings in line with the different outlets
  • To creatively support the hotels team for amenities, special promotions or any other activities including the pastry offering
  • To ensure appropriate cost control.
